Victoria sponge :)


This is the cake I made for my sisters bridal shower it went down a treat and was easy to slice.I hope you enjoy it as much as we did :)
Ingredients-(fills two 7 inch tins)
220g self raising flour (sifted)
220g butter (soft)
220g caster sugar
4 large eggs
2-3 drops of vanilla essence
For the filling-
whipped cream flavoured with vanilla essence
strawberries (optional)
a jam of your choice (i find strawberry is the best)

1.Preheat teh oven to 170C Line the bottom of your 7 inch round cake tins and grease the sides with butter.
2.Cream the butter and the sugar till almost white.This step is important so take our time.
3.whisk the eggs in a jug and slowly add to the butter.Add around a tablespoon then whisk and keep going so the mixture doesn't curdle,again be patient :)
4.Sieve a third of the flour into the batter and fold in with a metal spoon make sure all the flour is incorporated.
5.Pour the cake batter into the tins making sure each tin gets an even ammount.Bake for approx 30mins being careful not to open the oven door.When the cake looks done check the middle with a cocktail stick to see if it is cooked through if the cocktail stick comes out clean its ready
6.Leave to cool.Spread teh jam on the bottom cake and layer on the strawberries then the cream careful lift your other cake onto the top dust with icing sugar and enjoy! :)
